ZARDO PULAO
INGREDIENTS:
500g Amira Pure Rice
10 bay leaves
500 g sugar
2tsp desi ghee
20 g almonds
20g cashew nuts
5 star anise
10 green cardamoms
1 g saffron
2 tbsp milk
SERVES: 4
PROCESS:
1. Soak Amira Pure Rice for 20 minutes.
2. Simmer water in a pot and add half of the bay leaves.
3. Add the soaked rice to the sweltering water and simmer.
4. At what time rice starts to float on top, deplete out the water.
5. Blend sugar with the rice.
6. Heat ghee in a handi and add the remaining bay leaves.
7. Add chop up raisins, almonds, cashews nuts, star anise and green cardamoms.
8. Blend milk and saffron and shake over it on the rice.
9. Coat it with a lid.
10. Cook for 8-10 minutes on low warmth and dish up hot.
